PDO Mavrodaphne of Patras wines must be aged in oak barrels with a capacity of up to 1,000 liters for one year. For the designation Reserve (Selected), a two-year aging in barrel and one year in bottle is required; for the designation Vieille Reserve, two years in barrel, two years in bottle, and a total of five years aging is necessary. Finally, for the designation Grand Reserve (Specially Selected), at least three years in barrel, three years in bottle, and a total aging of seven years are required.

Organoleptically, PDO Mavrodaphne of Patras wines are characterized by a deep red color with garnet reflections, aromas of black dried fruits, raisins, caramel, sweet spices, a rich body, moderate acidity, and a long, intense finish.
