Aidani is a white grape variety found in the Cyclades, particularly on the island of Santorini. It is also cultivated in the Peloponnese and Central Greece. This variety is drought-resistant and ripens late.
It produces light-colored wines with distinctive aromas of white flowers, along with notes of stone fruits, citrus, and minerality. Aidani has moderate acidity and a medium body. It is rarely bottled on its own and is typically blended with Assyrtiko to "tame" its strong acidity and add complexity to the aromatic profile.
It is included in the dry wines of PDO Santorini and in the sweet Vinsanto. It is permitted for the production of wines under the Protected Designation of Origin for Cyclades, Karystos, and Ritsona Avlidas.
