Vinification: Gentle pressing with only the free-run juice collected. A week-long pre-fermentation battonage is followed by fermentation with indigenous yeasts in stainless steel tanks (50%) and egg-shaped tanks (50%) at controlled temperatures. After fermentation, the wine matures on its fine lees for 11 months.
Color: Pale lemon.
Tasting Notes: Medium-intensity aromas of stone fruits are accompanied by notes of white flowers, chamomile, and wet stone. The palate is rich and complex, showcasing vibrant acidity and a long, creamy mineral finish.
Aging Potential: 5-7 years.
Food Pairing: White meats & poultry, seafood, fish. Best served at 13-14°C.
