Badia a Passignano 2021, Antinori

Vineyard: The vineyards are situated around the Passignano abbey, which boasts a 1000-year tradition of producing renowned wine, right in the heart of Chianti Classico. These vineyards lie at an altitude of 300 meters above sea level, with a soil composition that is both limestone-rich and clayey.

Winemaking: After destemming, a gentle pressing took place. The alcoholic fermentation lasted for 10 days, followed by a maceration period with the skins for 10-12 days. The wine was then transferred to oak barrels, where malolactic fermentation occurred, and it aged for several months in Hungarian oak barrels, with a small percentage in French oak. Once aging was complete, the blending took place, and the wine was bottled. Before its market release, the wine continued to age in the bottle for a period of time.

Characteristics: A deep ruby color. The nose reveals expressive aromas of red fruits, intertwined with floral notes and a hint of white chocolate. The palate is rich and perfectly balanced, featuring soft, velvety tannins that impart elegance, a strong character, and an exceptional length of flavor.

Pairs well with: Game birds.

Aging potential: Up to 15 years from the harvest.
